She'll show you how to make panzerotti--crisply fried ravioli with a filling of melting mozzarella and salami; pasta alla genovese--nothing to do with Genoa, a sumptuous slow-cooked oniony beef ragu; and a whole fish encased in salt for baking, served with bitter greens (Neapolitan friarielle) and lentils.
