Fermentation workshop planned for Good Tern Co-op

Rockland — Got culture? Good Tern does! Mae Boyle will lead a introductory, hands-on, lacto-fermentation workshop Wednesday, Jan. 22, at 7 p.m. at Good Tern Co-op.

Participants will go home with a jar of kraut.

Prior to refrigeration and canning, there was fermentation. This process transforms food with microbial assistance, making the nutrition within it more bio-available for bodies and aiding in digestive and immune systems. It is this process that yields cheese, bread, wine, beer, and even chocolate.

"I have been playing with my food and microorganisms for several years. In this workshop we will be making a basic batch of sauerkraut and getting our hands salty (and cabbage-y)," Boyle said.

This event is free and materials are provided by Good Tern.
