Buffalo cauliflower wings

I’ve seen many versions of this recipe, and this one is about as easy and delicious as you can get. My husband, who professes not to love cauliflower, raved about these and went back for seconds and thirds. They’re good and spicy, so you’ll definitely want some cool celery sticks or bok choy stems (my favorite!) and some ranch dressing as a chaser. I hear these are a favorite of the kiddos, even those who don’t like spicy stuff.

Ingredients for wings:

1 large head cauliflower

1 cup flour

1 cup plain unsweetened nondairy milk

2 tsp. garlic powder

1 tsp. baking powder

1 tsp. paprika

1 tsp. onion powder

1/2 tsp. black pepper

3/4 cup hot sauce, such as Frank’s RedHot

3 Tbsp. melted vegan butter, such as Earth Balance

Scallions, chives or cilantro for garnish

Directions for wings:

1. Cut or break the cauliflower into individual florets.

2. In a large bowl, combine the flour, nondairy milk, garlic powder, baking powder, paprika, onion powder and black pepper until it forms a thick batter.

3. Toss the cauliflower pieces in the batter, shake off any excess, and place them on a large sheet pan lined with aluminum foil and sprayed with nonstick cooking spray. Of course, you can skip the foil, but then you’ll have to wash the pan. Be sure the pieces don’t touch one another or they’ll stick together.

4. Spray them with nonstick cooking spray and bake at 450 degrees for 15 minutes. Turn and bake them for another 10 minutes.

5. While the cauliflower bakes, whisk together the hot sauce and melted butter.

6. After the cauliflower has baked for a total of 25 minutes, remove it from the sheet pan, dump it into a large bowl, and toss it with the hot sauce mixture. Return it to the sheet pan and bake for another 10 minutes.

7. Garnish with sliced scallions, chives, or cilantro.

Ranch dressing

1 cup eggless mayonnaise, such as Just Mayo or Vegenaise

1/4 cup plain unsweetened nondairy milk

2 tsp. apple cider vinegar

2 cloves garlic, pressed

2 Tbsp. minced parsley

1 tsp. onion powder

1 tsp. dried or fresh dill

1 tsp. dried or fresh chives

1/2 tsp. salt

1/4 tsp. paprika

1/4 tsp. black pepper

Whisk together all ingredients and chill well.
