This week's column is dedicated to Jan Clark, a dedicated wife, mother and job-holder who certainly is an excellent multi-tasker.


Broccoli Cornbread

1 (10 ounce) frozen chopped broccoli, thaw and drain

1 large onion, chopped fine

3/4 cup cottage cheese

1/2 cup margarine

4 eggs, well beaten

1 teaspoon salt

1 box Jiffy corn muffin mix

Mix well all ingredients except corn muffin mix. Add corn muffin mix. Put in greased 9-by-13 pan or 2-quart Pyrex dish. Bake at 400 degrees for 25 minutes.


Kielbasa Stew

1/2 cup Vidalia Onion Dressing

1 pound Kielbasa sausage (cut into 1 inch pieces)

15 ounce bag sauerkraut (rinsed and drained)

1 Granny Smith apple (unpeeled and diced)

1 pound red potatoes (quartered)

1/2 cup chicken broth

Combine all ingredients in slow cooker. Cook on high for 4 hours or until potatoes are tender.


German Apple Cake

2 large eggs

1 cup oil

2 cups sugar

1 teaspoon vanilla

2 teaspoons cinnamon

1 teaspoon baking soda

1/4 teaspoon salt

2 cups flour

4 cups apples, diced

1 cup nuts

Beat eggs, oil, sugar, vanilla, cinnamon, baking soda and salt. Add flour and mix with wooden spoon, batter will be hard to mix. Stir in apples and nuts. Put in greased 9-by-13-inch pan. Bake at 350 degrees for about 1 hour.


2 (3 ounce) packages cream cheese, softened

3 tablespoons margarine, melted

2 teaspoon vanilla

2 cups powdered sugar

Mix cream cheese, margarine, vanilla and powdered sugar. Ice cooled cake or sprinkle with powdered sugar.


Tuna Burgers

1 can water packed tuna, drained

1 can cream of mushroom soup

minced onion to taste

sandwich buns

Mix tuna, soup and onion. Spread on sandwich buns. Wrap in foil and bake at 300 degrees for 20 minutes.


Cranberry Jello Salad

6 ounce red jello

2 cups hot water

2 (15 ounce) cans whole cranberries

Mix Jello in the hot water, add cranberries. May also add 1 cup chopped celery or 1 cup chopped nuts – or 1 cup chopped apples. Chill.
