Chocolatier Blue, a family-owned specialty chocolate shop opens June 25 at 12 Bay View St. Chocolatier Blue uses only fresh ingredients, organic ingredients whenever possible and the finest Italian chocolate.

The Camden location of Chocolatier Blue will be owned and operated by Dwight and Maggi Blue of Warren. Dwight’s brother Chris Blue, a graduate of the French Pastry School in Chicago, established the business in 2007.

Since then, Chocolatier Blue has grown to four locations: three in California and one in Lincoln, Neb., where the Blues grew up on a self-sustaining family farm. Another shop will be opening this summer in California; the Bayview Street shop is the company’s first East Coast location.

“We are so excited to be bringing these special dark chocolate truffles to the Midcoast,” said Dwight Blue in a news release. “Our selection will vary with the season but will always be made from the finest and freshest ingredients. My brother makes chocolates that are as beautiful to look at as they are delicious to eat.”

At the Chocolatier Blue Flagship store in Berkeley, Calif., the top sellers are passion fruit caramel, hazelnut and espresso. Other favorites include peanut butter and jelly and sage honey. A complete list is available on the company’s website. Chocolate bars — orange peel, lemon peel, coconut almond, and peanut butter caramel – will also be available.

Chocolatier Blue’s hours on Bayview Street will be Sundays through Thursdays, 10 a.m. to 8 p.m. and Fridays and Saturdays, 10 a.m. to 9 p.m. In addition to truffles available by the piece or box, the store will sell organic dark chocolate by the bar, and hot chocolate made to order using Domori chocolate from Italy, Chocolatier Blue’s main ingredient.
