Turkey Salad with Fruit

3 cups cut-up cooked turkey or chicken

3/4 cup seedless red grapes

1 can (11 ounces) mandarin orange segments, drained

1 can (8 ounces) sliced water chestnuts, drained

2 medium green onions, thinly sliced (2 tablespoons)

1 container (6 ounces) peach, orange, or lemon low-fat yogurt (2/3 cup)

2 tablespoons soy sauce

mixed salad greens

Mix turkey, grapes, orange segments, water chestnuts, celery and onions in large bowl. Mix yogurt and soy sauce. Pour over turkey mixture; toss. Cover and refrigerate about 2 hours or until chilled. Serve on salad greens.

 

Split Pea Soup

2 1/4 cups dried split peas (1 pound), sorted and rinsed

8 cups water

1/4 teaspoon pepper

1 large onion, chopped (1 cup)

2 medium stalks celery, finely chopped (1 cup)

1 ham bone, 2 pounds ham shanks or 2 pounds smoked pork hocks

3 medium carrots, cut into 1/4 inch slices (1 1/2 cups)

Heat all ingredients except carrots to boiling in 4-quart Dutch oven, stirring occasionally; reduce heat to low. Cover and simmer 1 hour to 1 hour and 30 minutes. Remove ham bone; let stand until cool enough to handle. Remove ham from bone. Remove excess fat from ham; cut ham into 1/2 inch pieces.

Stir ham and carrots into soup. Heat to boiling; reduce heat to low. Cover and simmer about 30 minutes or until carrots are tender and soup is desired consistency.

 

Ranch Pudding

2 cups brown sugar

2 tablespoons butter

2 1/2 cups biscuit mix

1 cup nuts, chopped

1 teaspoon vanilla

2 1/2 cups water

1/2 cup milk

1 cup raisins or chopped dates

Mix in saucepan 1 cup brown sugar, water, butter. Boil 5 minutes. Pour into 9 inch square pan. Mix in bowl 1 cup brown sugar and remaining ingredients. Spoon batter into liquid mixture in pan. Bake 45 minutes at 350 degrees. Serve with whipped cream.

Betty...I love your column and read it weekly.....It always makes me think of coming to lincolnville and the farm and sharing sweet times with Butch....Happy new year.....mary strout
