Mainely Yum! Breakfast at the Old Granite Inn

Today we have our first Maine B &B recipe.
Guests at the Old Granite Inn sing high praises for Edgar's Strada.
Prepared the night before and baked the next morning, it's a great recipe to wow your visitors and give yourself a break.
Variations can be made by changing the type of bread, cheese, and meat. Or, omit the meat altogether and substitute mushrooms instead.
Old Granite Inn Traditional Maine Strata Serves 6-8
Ingredients
5 Slices White or Wheat Bread, crusts off and chopped into 1 inch squares
1/3-1/2 c. chopped scallions
½ c. chopped ham
2 c. cheddar cheese
6 fresh eggs
½ c. half & half
Salt and Pepper to taste.
In a 9 x 9 prepared baking dish, arrange a layer of bread with gaps in between slices.
Combine scallions, ham and ¾ c cheddar cheese, layer over bread. Add another layer of bread to cover. Top with ¾ c cheddar cheese.
Whisk eggs,½ and ½, salt and pepper together.
Pour slowly over layered mixture until the pan is full.
Add remaining cheese. Cover with plastic wrap and refrigerate overnight. In the morning, preheat oven to 350. Remove covering and bake for 1 hour. Slice into squares and serve.

Joan springs from a graphic design background and still operates her design business from an upstairs studio.
Joan utilized the best of her creative talents to refit and furnish the inn with a uniquely contemporary, serene décor reminiscent of modern Japanese simplicity. Each room and accompanying bathroom are spectacular examples of modern design that is pleasing to the eye, comfortable and stylish. Blonde hardwood floors and dining room tables, single halogen down lights, colorful throw rugs and the simple elegance of one flower in bloom are all part of the
Old Granite Inn experience.
Clean lines, restful colors and smooth surfaces add to the serene interior of the Old Granite Inn.
The inn once housed the Elks Club of Rockland, during which an extension was added to the back of the house, nearly doubling the size of the original structure. Also on staff is the family dog, a politely friendly and laid back Springer Spaniel named Zack. The Granite is pet friendly, so it is a fantastic spot for travelers with beasts.
Rooms are furnished with full sized bottles of organic lotions, soaps and toiletries, adding to the feeling of home away from home, and helping the environment. Edwin has a puzzle going in the main room at all times, inviting guests to join him in piecing it together as inspiration strikes. Edwin’s breakfasts are light yet filling, with quiche, scones, sausage and huge muffins. Breakfast is a conversational event. Guests dine at a huge table together, enhancing the B & B experience.
